No lie, thinking about food isn't my favorite thing right now. Unless it is food I want. Like Five Guys. mmmmmmm Five Guys. Burger. bacon. cheese. green pepper. lettuce. mustard. pickles. big bag of fries. Mmmmmm....
So what recipe shall I share?
In the spirit of Thanksgiving and pumpkin pie, I give you, a family favorite:
Pumpkin Pie Cake!
Crust:
1 pkg. yellow or white cake mix
remove one cup and set aside
Add 1 cup melted butter and 1 egg
Mix together and pour into Pam sprayed 9x13 dripper pan.
Filling: Mix together:
3 cups pumpkin
2 1/2 tsp pumpkin pie spice
1/2 tsp cloves
2 tsp ginger
1/2 tsp salt2 tsp cinnamon
2 tsp nutmeg
1/2 cup brown sugar
1/2 cup white sugar
3 eggs
2/3 cup canned milk
Mix well and pour over top of cake mix.
Topping: Mix until crumbly and sprinkle over filling:
1 cup reserved cake mix
1 tsp cinnamon
1/4 cup sugar
1/4 cup butter
Scatter 1/2 cup or more slivered almonds (or pecans) over top of cake
Bake @ 350 for 45-50 minutes until knife comes out clean.
Served with whipped cream on top.
