Yesterday I decided that I wanted soup. Forget that it was taco Tuesday. I want soup! I actually forgot that it was Tuesday and I thought it was Quesadillas for dinner, so I was going with the excuse that it was to be a side for dinner. I wasn't just craving any green tortilla soup, I was craving my friend Shandra's. I called her up but she was at work. So, I set forth to find the perfect green tortilla soup recipe.
After many food network and pintrest searches, I settled on mixing two recipes together. One my friend had just made and loved and another well rated recipe. I set out and bought the ingredients (took all of $9.00. I can approve of $9 recipes). Jameson had called me and told me what a long day he had had so now my mission had doubled! He needed comfort food and I had to deliver! I knew his favorite soup was the Yucatan Chicken Soup from Zupas so I tried to find that recipe but... they're kind of like Fort Knox.
I started sauteing the onions, carrots and garlic when I got to jalapenos. When I was in the store I went with 4. It said 5-6 but I didnt think that would be necessary. I cut up one. Threw it in the pot. Luckily Chloe needed me at this point so I walked away for a few minutes. When I came back I looked at the bag and thought, do I really want another jalapeno? The recipe calls for at least 3 more... my friend loved this recipe, her 5 year old son ate it... I guess I'll put in one more.
2 jalapenos.
Let me repeat that for those of you who need t re-read things.
2.... jalapenos.
I kept on cooking! Added the rest of the ingredients (sans chicken). I finally decided, "hey! I should try this delicious smelling goodness!" Dip in spoon, pull out broth,
BAM! Not a slap, not a pinch, not a nudge, BAM!
SO spicy! I call Bard, no answer. I call Boo, she just laughs at me and tells me to google how to de-spicify the soup. Everything I looked at said milk or cream but even then that advice was disputed. The most rational thing I read was to strain the soup so all the broth is gone and start it again. But I wasn't about to throw out all the broth!
Cheese it is.
I added cheese. A good inch of velveeta cheesy-goodness. Jameson doesn't like sour cream either... and I knew that would help, so even though I knew I'd tell him anyway, I sometimes like to pretend I'm sneaky and I added that just before he got home when I put the chicken in. I told him I'd take him to McDonalds before my group, I told him to order pizza. ANYTHING to let him know that eating what I had prepared was not necessary. We sat down with our cheese, cilantro covered bowls and...
Hmmm...
mmmm....
yummmmm....
swallow...
HOT! At least with all the toppings and attempts to de-spicify my soup it was more of a delayed reaction and not so much of a BAM... more like a... youch!
The end consensus was that the soup was delicious and that we'll make it again. But when we do, no jalapenos will be necessary. Well, maybe just one ;)

If you take the seeds out of the jalapenos, it won't be quite as spicy. You could still take out the jalapenos altogether.
ReplyDeleteJameson doesn't like sour cream? Mark hates mayonnaise (and miracle whip) and asks me to substitute sour cream for everything. ;)
